SIMPLY PERFECT … for Valentine’s Day


Red Velvet Cupcakes
makes about 24 cupcakes

2 1/2 cups organic oat flour
1 1/2 cups organic applesauce (no added sugar)
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp organic cocoa powder
3/4 cup vegetable oil
1 cup organic low fat buttermilk
2 large eggs, room temperature
3 TB beet juice (from jar of organic beets)
1 tsp organic white vinegar
1 tsp organic real vanilla extract

Preheat oven to 350 degrees. Place liners in cupcake or muffin pans.
In large bowl, sift together flour, baking powder, baking soda, salt and cocoa powder.
In separate bowl, whisk together apple sauce, vegetable oil, buttermilk, eggs, beet juice, vinegar and vanilla extract.
Combine flour and oil mixtures and beat with electric mixer until batter is very smooth.
Pour batter into cupcake liners and bake for about 20 minutes, rotating pan after 10 minutes.
After cupcakes cool completely, frost with Cream Cheese Frosting (recipe follows).

Cream Cheese Frosting
8 ounces organic reduced fat cream cheese, softened
1/4 cup organic butter, softened
1/2 tsp organic real vanilla extract
1/4 tsp organic almond extract

Mix all ingredients together in large bowl and beat with electric mixer until smooth. Refrigerate for at least 30 minutes if frosting isn’t firm enough.
